Wellness Day 16 – Plant Based Diet

Eating healthy is not always easy for various reasons. Time. Energy. Availability of ingredients. Logistics of your schedule. Tonight I made a simple, delicious vegetable soup. I actually put all the ingredients in the slow cooker this morning but I forgot to plug it in! I was able to cook the soup in a pot on the stove and it turned out just fine. I boiled bowtie pasta separate and served the soup over the pasta. You can use whatever vegetables you have and/or like. This was my recipe made with ingredients I had on hand. I forgot to add the onion, which I had, but it was fine. Cooking is not always an exact science and I like it that way!

Recipe:

-3 carrots, peeled and cut into rounds

-2 stalks of celery

-2 large potatoes, peeled and diced

-1/2 cup green beans

-1/2 cup grape tomatoes

-1 cup of baby spinach

-1-2 Tablespoons Better Than Bouillon

-6 cups water

-1 teaspoon salt

Directions: Combine all ingredients in a pot and bring to a boil. Reduce heat and simmer for 45 minutes or until desired tenderness of the vegetables.
